I cook all sorts of things, pretty regularly. I'm always experimenting, testing, refining, tweaking, tuning and pruning. Not everything I cook winds up on the website. There are some things that simply don't make the cut. Usually things that don't make the cut get nixed because they just simply weren't delicious. However, some of the time, I'll post something that wasn't delicious, because there's a lesson in it, or I just wanted to rant and thought the angle might be amusing. There are also the times that things don't get posted because the results simply don't match my vision and I'd like to continue refining the direction, until I bring it into harmony.

Of all the things I've posted, this is the one that is most dangerously close to being cut. It made it, but only by a hair, and only because it's undeniably tasty. As it sat there ... I noticed I kept walking over to it and taking bites. In fact, I work with a wonderful photographer who helps me make the photos look bright and colorful. Even HE kept sneaking little bites. We both acknowledged how tasty this was! These are the reasons you're reading this. It was ... just ... that ... yummy.

HOWEVER! It was a weird mess to make and I think it would be near impossible for most.

First, you need to grate the raw vegetables through a cheese grater. Ok, no problem. Then, you need to season the grated mixture and let it sit around for 20 minutes, while the salt pulls the extra moisture out of the veggies. Still ... no problem. Now, you need to squeeze the extra moisture out of these grated roots. Suddenly, you've been hurled into a world of slimy snork. Grab a big handful of the stuff and SQUEEZE between your two hands, letting the off-white goo ooze between your fingers. Now, it becomes a bit odd. Still ... ok ... this COULD still be yum. Let's keep going!

Now, heat up a pan with some oil. Not too hot, so it doesn't burn. Sprinkle your dry-ish strands of grated root veggies over the hot rippling oil, while it splatters and sputters. Keep going, until it's a thick layer of hash.

Hash browns made out of potatoes stick together because potatoes are FILLED with gummy starch. Each strand grabs onto the strand next to it, forming a bonded potato starch matrix, which is easy to move around, flip, browns nicely, etc. HOWEVER, these ingredients have very few carbs; no real sugar or starch acting as glue and nothing to really caramelize (turn into a nice brown color). In essence, we have a pan filled with 10's of thousands of little tiny sticks, simply resting on one another in a hot pan. They're not glued together. They are ... independent of one another. Furthermore, they go from white to black, in the blink of an eye. There is middle ground; no tanning or browning.

Knowing that there was nothing to hold these sticks together, I was really stressing the moment where I had to flip this monster hash and cook the other side. Thankfully ... I'm a professional!

I grabbed my biggest plastic spatula, put out roadblock signs and taped off the area. I made sure the coast was clear. I took my big pan, slid my spatula under the quickly burning pile of root-twigs, dropped the pan in a smooth controlled motion. Then, just as deliberately, began a controlled push upwards. All in one calculated move, I allowed the inertia of the upwardly mobile mixture to continue into the air, while I abruptly stopped the pan in midair. With the spatula, I did my best to coax as many of the little strands into doing a midair 180 spin, in unison, landing flatly back into the waiting pan.

I've done this a million times. If there's something holding it together ... no problem! If there isn't ... well ... that's a whole different kettle of fish!

About 25% of the mixture decided they knew better than the spatula and headed for freedom on my kitchen floor. The other 75% did land more or less neatly in the center of my pan. From there, I was able to rest the pan back on the stovetop, while it cooked. I grabbed the mop bucket.

Once I was sure it had cooked through, I tilted the plan and slid it onto the plate, the photographer took the picture, we grabbed some ketchup and ... nibbled away.

Yep! It was THAT good!

Method:

  1. Peel both the turnip and celery root.
  2. Grate both through the large grate of a cheese grater into a large bowl.
  3. Season the mixture with salt and pepper. Mix well. Set aside for about 20 minutes.
  4. Squeeze as much of the liquid out of the mixture as possible. You can do this with cheesecloth, or simply by compressing the mixture between your palms.
  5. Heat up a flat top griddle, skillet or large non-stick sauté pan over medium-low heat.
  6. Add your oil to the pan and swirl it around to evenly coat the bottom.
  7. When the oil begins to ripple, evenly distribute the grated mixture over the bottom of the pan. Allow the mixture to cook until the surface is as golden in color as is possible.
  8. CAREFULLY flip the mixture in the pan and cook the other side. When the entire mixture is cooked through and browned on both sides, remove from the pan and serve.
  9. Tastes great with ketchup!

Yep! I think an egg and a small amount of tapioca or arrowroot flours would go a teeny bit more towards holding it all together.

I actually need to play more with turnips. For whatever reason, they've just never really been on my radar. I have no issue with them ... they're just sorta ... not in my world. Like radishes or cucumbers ... I have no major issue with either of them. They're just ... sorta ... over there ...

I also use turnips to make au gratin. My husband loves it. Finely, chopped cauliflower, onion, and a little green pepper fried up is a good substitute for hashbrowns too.

Interesting idea, unknown, but ... doesn't it get all steamy inside there? I've actually never seen such a pan. I'm intrigued!

Get one of those omelet or pancake pans that have a lid and allow you to flip by just flipping the pan! sounds good with just the turnips or maybe jicama. I like zucchini the best, though.

Unknown ... yep! I agree! I may even add a touch of tapioca or arrowroot flours, just to add a twinge more "bind". GREAT call on the sunchokes, by the way. I LOVE those things. Hard to peel, but ... one of the best flavors and textures on earth! :)

All you need to make it sticky is 1 Tablespoon of egg white, whipped. I have made this with grated sunchokes, turnips, and rutabagas. Yum.

Joanna, I'm so sorry to hear it. I LOVE celery root, FAR more than the turnips. I'm wondering if they just weren't made fine enough? They should've cooked about evenly with the turnip. In any event ... I'm sorry it didn't turn out for you. Don't give up on the celery root. It's really a wonderful thing!

i made this today and wish i would've left out the celery root! it was very tough and i felt like i was chewing a stick. the parts with the turnip were good but the celery sticks were all throughout! i kept having to spit into a napkin when i go a celery root piece. i'd never tried it before so i had no clue how it would come out. definitely not one of my favorite veggies...

Sure thing, Liz! That method will work quite well! A very common trick in the restaurant world, in fact. I think in the future, I may add an egg, to help the whole thing hang together a bit ... just a random thought ...

Thanks for the laugh and the idea to mix the celeriac and turnip! I haven't tried these before. I usually use zucchini or daikon radish. I use the grater blade on my Cuisinart instead of grating by hand. And then mix the salt in there and let it sit for a while. Then, I dump everything into a flour-sack type towel and squeeze the heck out of it (it will get more moisture out) and then fry them up.

I actually do something similar, but with pure zucchini and a little coconut flour, to add some thickness and body. GREAT stuff! :)

I make these with grated turnip & zucchini, put it all in a clean tea towel & squeeze the heck out of it, add an egg, salt pepper & fry little mounds gently till cooked. They turn easily & taste awesome. Every time I make them the batch gets bigger cos we eat so many. Who knew they'd be so great without potato

LOL! Thanks, Kathy! Yep, that plate swaperoo trick will help, for sure ... just be delicate about the whole thing. (consider adding some egg whites, though! ;) )

I have been just LOVING reading your recipes and the fact that your posts are engaging and humorous is a plus. I don't usually miss hashbrowns too much but this intrigues me. When I fry real hashbrowns I brown one side and then put a plate about the same size as the skillet on top and do a 180 with the whole thing. Then I just slide the hashbrowns back into the skillet. Maybe I'll try this method with your recipe. It won't be as fun to watch or read about as your method though!
